Spring Rolls

Ben Tre vegetarian sour sausage specialty

Ben Tre, Vietnam is not only famous for coconut but also a paradise of many other delicious fruits. Taking advantage of available ingredients, the "coconut land" has created a special dish, which is vegetarian nem chua with a simple and easy-to-make recipe but also very unique. One of the famous vegetarian nem chua brands in Ben Tre is vegetarian nem chua.

Ingredients for making vegetarian nem chua include grapefruit, papaya, wild star fruit (star fruit) and spices. It sounds simple but it is very elaborate and time-consuming to make. The person making nem must choose green-skin grapefruit or nam roi, choose young fruit, the type that has just grown, peel off the green skin on the outside, only take the white silk shell, slice thinly, blanch in boiling water, and drain all the bitterness. Star fruit, choose medium-sized fruit, blend, and squeeze to get the juice. For duck-billed papaya, choose the pink type, shred into fibers, squeeze to drain the water.

Take the star fruit juice, mix it with the grapefruit peel, stir-fry over low heat and stir continuously for 6 hours. If stir-frying with a machine, it will take exactly half a day. Let it cool, mix in the shredded papaya, add spices (pepper, sugar, seasoning powder, chili, Vietnamese coriander), knead until smooth, then use banana leaves to wrap into spring rolls. Each finished product is about 18cm long and weighs about 100 grams. If you want to keep it for a long time, you must vacuum seal it and keep it in the refrigerator.
Although the way to make vegetarian nem chua sounds simple, it is actually very elaborate. Vegetarian nem chua can be enjoyed after about 3 hours. The nem has a chewy, crispy, slightly salty, sour, sweet, spicy, and bitter taste that is extremely appealing to eat.

Vegetarian sour spring rolls always follow the principle of the five elements: Metal, Wood, Water, Fire, Earth of heaven and earth. From color, flavor, spices to the process. The red color of papaya (Fire), the white color of grapefruit peel (Metal), the green color of star fruit (Wood), the brown color of spring rolls (Earth), the black color of pepper (Water). The main ingredients include 5 types: grapefruit, papaya, wild star fruit, spices, packaging.

Vegetarian nem chua is often eaten as a snack, but for many people, this is still a dish often used in family meals.

How to preserve grapefruit peel spring rolls:
• Nem is a product with this short characteristic so we can eat it right after removing the shell.
• However, spring rolls can be stored at normal, dry, cool temperature for about 3 days.
• Store in the refrigerator to preserve spring rolls for 7 to 10 days.
• If vacuum sealed and kept in the refrigerator: can be preserved for 30 days (quality remains unchanged).
