- The next equally important step is to help the roasted coffee beans release gas. During the roasting process, the coffee beans will release many substances in the form of gas that exist inside the roasted coffee beans. These gases affect the quality of the brewed coffee. Appearance of raw roasted coffee

With raw roasted coffee beans, the outside has a natural light shine, looks a bit rough, when touched it is completely smooth and not sticky. Sometimes you will see a layer of water-like shine appear unevenly on the body of the bean, you can't feel anything when touching it, that is the natural essential oil secreted inside the bean. It is completely different from the oil that comes from coffee mixed with butter when roasted.

The taste of roasted coffee

Raw coffee powder has a low density so it easily floats under the tension of the water surface and slowly sinks as the water gradually absorbs and creates the characteristic brown color of coffee. Meanwhile, with coffee sets mixed with soy cornstarch, when put into water, it will dissolve quickly and sink, a part of the impurity powder mixes into the water to create a dark, black color.

Pure coffee when brewed with a filter

Freshly roasted coffee is easily recognized by adding hot water to the filter, causing a lot of foaming, sometimes overflowing the filter. This is because the coffee is new, the amount of gas still present in the coffee powder when it meets water will accelerate the process of releasing gas to create foam.

Coffee grounds after extraction are still hard, and you can clearly feel the solidity when you squeeze them. With coffee mixed with cornstarch, when hot water is added, there is a phenomenon of swelling, little foam, and the coffee grounds are mushy when squeezed. Water extracted from pure coffee often has a characteristic cockroach brown color. The dark or light brown color depends on the roasting level of the beans, but the brown color is clearly visible. As for impure, poor quality coffee, it is often black, because the flour and butter are burnt when roasted with coffee. Similar to pure coffee brewed by machine, the coffee grounds after being brewed by machine do not stick together, and when squeezed by hand, they are not mushy at all.
